Cut-Out Sugar Cookies (Valentines Cookies)

I came up with this recipe by simply using the basic sugar cookie ingredients and making them vegan. Sugar cookie recipes are pretty much all the same give or take. I love this recipe because it contains vanilla and almond extract so the cookies themselves are amazing. No bland sugar cookies here! Of course, for allergies, feel free to substitute the almond extract with lemon extract or a double shot of vanilla. These cut out cookies are great for any occasion but with Valentines Day coming up, why not make them hearts with pink frosting? Then I can share them with friends for the holiday too.

Make sure your butter is room temperature. Then cream the butter first before adding in the other wet ingredients. In a mixer add sugar, vegan yogurt, non-dairy milk, & extracts.

In a separate bowl, whisk the flour, baking powder, & salt together. Add to the wet ingredients & mix until smooth.

This is a very thick dough so you may want to kneed the dough in order to create a smooth consistency. Wrap the dough in plastic wrap & put in the refrigerator for 1 hour.

Pre-Heat oven to 350°. Place parchment paper on baking sheet.
Roll out dough 1/4 inch thick & use desired cookie cutter to make shapes.

Bake for 8-10 minutes & allow the cookies to cool completely before frosting.

The frosting is so simple but possibly the best part to this recipe. Its coconut cream, powdered sugar, and vanilla. YUMM! You can add as much powdered sugar to get the consistency you want but I added two cups to get a comparable consistency to royal icing. I added a little pink and red coloring to some of the frosting. I like to put the frosting in pastry bags, using a small and slightly larger circle tips. I then grab a cup & use that to hold the frosting so it doesn’t leak out.

Frosting is my favorite part, especially if I have my niece and nephew over to help.

I know for myself, I need real wisdom & truth. I tend to over think things & get caught up in the “what ifs”. That doesn’t get anywhere. What really does lead me in the right direction is when I call on the Lord & talk things out with Him. Many times I need to be patient, which Im horrible at. We live in a world where everything should have been done yesterday but we get better results when we allow God to do things in His time, in His way. He always answers all prayers, its just we don’t always take the time to listen. Lets give thanks, being grateful for everything, & allow God to speak to us.
