Pumpkin Cinnamon Chip Muffins

Hello Friends! This is my first post and I’m very excited about it! I love baking and sharing ideas. Especially ones I see on Pinterest. Do you ever feel like there are such amazing ideas on there but then you try them and fail? Well I’m going to be your guinea pig and try them for you! Just comment what you want to see and I’ll try it.

Today I am sharing my favorite treat that gets rave reviews! I love making them because everyone loves them. They are Pumpkin Cinnamon Chip Muffins. This is the easiest recipe to make (literally four ingredients) and trust me; people will think you’re an amazing baker. They wont even know how little effort they take. I actually got this recipe from a friend and changed the cinnamon chips to a homemade version that is incredible. The homemade cinnamon chips are so much better than the store bought ones and are really easy.

It’s a weight watcher recipe without the cinnamon chips and is only 2 points! If you’re not too worried about some extra calories, I really recommend adding the cinnamon chips. The cinnamon chip recipe is from Bright Eyed Baker. They make your house smell like cozy holiday cinnamon goodness! Seriously better than any candle.

Then for the Muffins:

Pre-heat oven to 350°F, and line your muffin tins with aluminum liners, not paper. Paper liners will stick to the muffins. Spraying the tins with non-stick spray works good too, I just like the easier clean up with liners. I get a different amount out of this recipe every time I make them but I usually get around 18 muffins from one batch. Add 1 box of Spice cake mix to a large bowl, I recommend the Duncan Hines kind, with 1-15 oz. can of pumpkin puree, and 1 cup of water. I haven’t ever had any issues with over mixing or under mixing so don’t worry. It’s okay to have some lumps as long as they are not too big. Then fold in 1 cup of cinnamon chips. If using store bought, it’s like half a bag. Fill the muffin tin ¾ way full, they don’t rise much at all. I use a cookie scoop and add about 3 scoops in each tin. They bake for 25 minutes and voila! Amazing, simple, fall festive, pumpkin cinnamon chip muffins!
