Vegan Oatmeal Muffins

I love oatmeal. Its pretty basic but versatile and not to mention good for you. Its a perfect warm comforting breakfast to start the day.

Oatmeal is full of nutrients, rich in antioxidants, contains fiber, can lower cholesterol, can improve blood sugar, helps you feel full longer, and more.


Oatmeal can be boring.

That being said, I am frequently looking for different ways to spice up my oatmeal. I love making this recipe the night before because I typically don’t have a lot of time in the mornings to make breakfast. Feel free to add any kind of berries to it and toppings to what you prefer. I personally love adding granola and coconut milk yogurt. I always use my favorite Purely Elizabeth granola in the cranberry pecan variety. I tell ya, there is something amazing about this granola.

To start this recipe, first make the flax egg. It takes a couple minutes to set up. I use flax egg in this recipe because it acts the same as real eggs but healthy and kind. It has the same gunky texture as egg.

Mix the wet ingredients.

Mix the dry ingredients and combine them together.

Grease about 15 muffin tins, I used paper liners and realized I just needed to grease them. Don’t use paper liners because the muffins will stick to it.

If using blueberries, sprinkle a few on top before baking.

Bake in the oven for 25-30 minutes.

Tip-Plan on 25 minutes and add time, if needed.

Serve warm and if desired, add the optional toppings.

Vegan Baked Oatmeal
A lovely oatmeal muffin.

  1. Pre-heat oven to 350°F. Grease muffin tins with non-stick spray or coconut oil. Make the flax egg by mixing the ground flaxseed with water and let it set up. Then mix the Coconut Milk Yogurt Alternative, Applesauce, Non-Dairy Milk, & Pure Vanilla Extract. In a separate bowl add the Salt, Ground Cinnamon, Old Fashioned Rolled Oats, & Baking Soda. Mix in the Flax egg with the wet ingredients until smooth. Combine both dry and wet ingredients together. Grease muffins tins, about 15. Fill the muffins tins almost full because they won't rise much if at all. If using blueberries, sprinkle a few on top before baking. Bake for 25-30 minutes for the oatmeal to set and slightly brown. Serve warm as is or serve with Granola & Coconut Milk Yogurt Alternative.
