Pre-heat oven to 350°F. Grease muffin tins with non-stick spray or coconut oil. Make the flax egg by mixing the ground flaxseed with water and let it set up. Then mix the Coconut Milk Yogurt Alternative, Applesauce, Non-Dairy Milk, & Pure Vanilla Extract. In a separate bowl add the Salt, Ground Cinnamon, Old Fashioned Rolled Oats, & Baking Soda. Mix in the Flax egg with the wet ingredients until smooth. Combine both dry and wet ingredients together. Grease muffins tins, about 15. Fill the muffins tins almost full because they won’t rise much if at all. If using blueberries, sprinkle a few on top before baking. Bake for 25-30 minutes for the oatmeal to set and slightly brown. Serve warm as is or serve with Granola & Coconut Milk Yogurt Alternative.
